March 15, 2022 - March is National Nutrition month, and the team of dietitians and clinicians at the University of Texas at San Antonio are sharing nutrition tips and favorite meals in celebration.
National Nutrition Month ® is an annual campaign created by the Academy of Nutrition and Dietetics . During the month of March, everyone is invited to learn about making informed food choices and developing healthful eating and physical activity habits. This year's theme is "Celebrate a World of Flavors."
In the Department of Dietetics in the College for Health, Community and Policy, instructors are committed to serving UTSA's students and the community by addressing complex nutrition prevention and intervention efforts.
List Leal Vasquez , dietetic director, heads up the program. Students also benefit from the expertise of Traci Keck, Vidya Sharma, Lance Whitlock and Sarah Ullevig as instructors.
In addition to the Coordinated Program in Dietetics, UTSA employs several sports nutritionists and dietitians within UTSA Dining .
Christine Sprehe is UTSA Dining's registered dietitian. She helps take the mystery out of healthy eating. "Power your life on campus with good food and a dining program that makes it easy for you to eat right," she said. “Nutrition counseling, assistance with food allergies and dietary restrictions, and cooking demonstrations are a free service for UTSA students.”
In celebration of National Nutrition Month, the UTSA Coordinated Program in Dietetics instructors are sharing their favorite meals (and recipes) on their social media channels. Give them a follow on UTSACPD Facebook or UTSACPD Instagram to see recipes for dishes such as arroz con pollo, Mediterranean quinoa bowl and chhole and roti.
